3 Lazy Healthy Meal Recipes

This Sunday, I am sharing 3 lazy healthy meal recipes through my lazy person’s guide to healthy meals youtube video. I don’t mean to call you lazy but if you are anything like me you may also be busy and get overwhelmed with thinking about where to start. So I am here to help! Disclaimer: I grew up in a household where we cooked based on feelings & vibes so I don’t have exact measurements for things. 

1. Breakfast

Ingredients
  • sourdough bread
  • turkey sausage
  • strawberries
  • eggs
  • butter
  • olive oil 
  • salt
  • black pepper
  • thyme
Steps
1. Toast 2 slices of bread in toaster. If you don’t have a toaster, an alternative option is to fry bread in a pan 
2. Spread butter on toasted bread
3. Spray olive oil in a pan, crack 2 eggs and season with olive, oil, salt, black pepper & thyme
4. Spray olive oil in a pan and fry turkey sausage until it’s dark 
5. Add strawberries. on the side 

2. Lunch

Ingredients
  • couscous
  • frozen vegetables
  • trader joe’s thai yellow sauce
  • drumstick chicken
  • walkerswood jerk seasoning hot & spicy 
  • olive oil 
  • salt
  • black pepper
  • thyme
  • garlic powder
Steps
1. Boil frozen vegetables for 10 minutes and drain water 
2. Fry vegetables on stove with olive oil, salt, black pepper & thyme until vegetables are burnt3. Preheat oven to 400 F
4. Season chicken with jerk seasoning, olive oil, salt, black pepper, thyme & garlic powder

5. Bake chicken in oven until chicken is dark
6. Boil couscous on stove
7. Add trader joe’s thai yellow sauce to couscous

3. Dinner

Ingredients
  • 8 tomatoes
  • 2 yellow onions
  • 2 packs of sweet mini peppers
  • trader joe’s zhoug sauce
  • frozen salmon (or cheaper protein of choice) 
  • olive oil 
  • salt
  • black pepper
  • thyme
Steps
1. Fry yellow onions with olive oil on stove until onions appear brown 
2. Cut sweet mini peppers and fry them on stove with onions 
3. Cut tomatoes and add them with peppers and onions 
4. Add olive oil, salt, black pepper and thyme 
5. Pour water and let the mix simmer until it reaches your acquired taste. I’ve noticed that the longer it simmers the better.
